This was pretty damn good. I loved the texture of the steamed egg... Like a firm block of jelly with a nice bouncy, springy consistency, and definitely silky. The thin panko (パン粉) coating was crunchy and nice, and that XO mayo was so, so tasty. I would love to have this for breakfast on a regular basis. Omelette soufflé - I still remember the amazing grilled cheese from Dominique Ansel Bakery Tokyo, so I was really looking forward to this. And this definitely did not disappoint!
Just look at how fluffy this thing was! And that jiggle! With melted Fontina and Gruyère in the middle, it was very, very delicious... although to be honest, a tad rich and heavy after the egg sandwich. Winter melon (冬瓜盅) - winter melon soup is a classic Chinese summer dish, and it's best when the gourd is hollowed up and used as a container for the ingredients to be cooked in. Well, there's no winter melon here, nor any ham or conpoy. What we've got here within the white chocolate shell is a center of pandan cremeux encased with lemongrass mousse, and a bottom made with chocolate rice crispies. Very Southeast Asian in terms of flavors.Durian - I wish this really was made with durian... but no. This was in fact a Cantonese tofu pudding (豆腐花), with tofu mousse encasing a red sugar ginger center. The flavors here were pretty light. The biscuit at the bottom was also made with red sugar ginger and tasted a little more punchy. I was very, very full... since Hello Kitty barely touched the sweet stuff. I no longer had any room for the seasonal pineapple sorbet I so badly wanted. Maybe next time...
